Ayoub Wines

Ayoub Wines is a small, hands-on winery located in the Dundee Hills AVA of Oregon's Willamette Valley. Founded by Mo Ayoub, who combines his passion for food and wine with an engineering background, the winery focuses on producing high-quality Pinot Noir and Chardonnay wines that showcase the unique terroir of their estate vineyard. The four-acre Estate vineyard, planted in 2001, is farmed using organic methods to produce low-yielding fruit with intense character. Mo's winemaking philosophy emphasizes a combination of tradition and innovation, with a commitment to bottling only the most successful lots among the barrels. Wines are fermented in small lots to provide better control over the fermentation process, resulting in balanced and complex wines that age well. With an annual production of less than 2,000 cases, Ayoub Wines maintains a focus on quality over quantity, allowing Mo to continuously learn and improve his winemaking approach. The winery's tasting experience is by appointment only, offering private tastings and the opportunity to join their Cellar Club.
