Baxter Winery is a small, quality-oriented Pinot Noir producer located on a coastal ridge-top above the Anderson Valley in Northern California. Founded by Phillip Baxter, who studied winemaking at UC Davis and interned in Burgundy, France, the winery produces around 2000 cases of single vineyard wines using traditional techniques, neutral oak, and wild yeast fermentation. The wines are made with a focus on minimal intervention, featuring a five-day cold soak, slow wild yeast fermentation, punchdowns done by hand, and an extra long aging regime. Baxter's approach is influenced by his French winemaking experience and his father, a veteran winemaker who inspired him to enter the field. The winery ages its wines in 100% neutral French oak barrels, allowing the vineyard and fruit to take center stage. Phillip met his wife Claire during their university days in France, and she now runs the business alongside him, overseeing the wine club and tasting room. Baxter Winery is known for its single vineyard Pinot Noirs, including the Valenti Vineyard Pinot Noir, which showcases a dusty, savory, herbaceous style due to its unique terroir above the fog line in the 'Mendocino Ridge' appellation. The winery's focus on organic and sustainable farming practices, combined with Phillip's traditional winemaking methods, results in world-class wines that consistently gain excellent reviews.
