Castoro Cellars

Castoro Cellars is a Paso Robles-based winery established by husband-and-wife team Niels and Bim­mer Udsen in 1983. The winery's founding philosophy is rooted in a "backwards approach," where they first made and sold wine, then gradually acquired equipment, the tasting room, and eventually vineyards. Castoro Cellars is known for its organic wines, with a focus on sustainability practices. Their tasting room is located in Templeton off Highway 46 West, while their winemaking facility is situated on the east side of Paso Robles in San Miguel. The winery offers various experiences, including E-Bike Tours and Whale Rock Disc Golf, as well as yoga classes and spirits tastings. With a strong emphasis on community engagement, Castoro Cellars invites visitors to stay and shop their products, featuring a selection of wines, including the 2025 Balena Experiences.
