Honnibrook is a Colorado craft meadery with locations in Castle Rock and Littleton. Its production meadery sits just south of downtown Castle Rock, tucked into the Personal Warehouse development, while a second tasting space, the Littleton mead cottage, sits in downtown Littleton. The tasting rooms are family and pet friendly and pour more than twenty meads on tap in a relaxed, casual setting. The meads are made as light, refreshing session-style drinks with lower alcohol, using honey, fruit, and spices. Styles range from traditional and session meads to melomels and metheglins, with examples such as Island Hopper, Peach Habanero, Cucumber Lime, and Earl Grey Lavender. The owners are hands-on makers who source ingredients for flavor and aroma rather than cost, blending old-world craftsmanship with modern equipment. Their work has won medals at the Colorado State Fair, Denver International Wine Competition, and Orpheus Cup, among others.
