Le Cuvier Winery

Le Cuvier Winery is a small, family-owned winery with an annual production of just under 4,000 cases, limited by county regulations to a maximum of 5,000 cases. The winery's signature approach lies in its lengthy barrel aging process, with a minimum of three years for most wines and some aged even longer. This unique character is gained through the slow oxidation and evaporation that occurs over time, but also results in significant losses due to evaporation – roughly a quarter of the wine is lost as "angels' share." Le Cuvier's winemaking philosophy prioritizes quality over quantity, making their wines mercurial in availability. The winery remains committed to its loyal Elliptical Members and visitors to its tasting room, where they can experience the distinctive character of their wines.
