Saxum Vineyards is a Paso Robles-based winery focused on producing Grenache, Syrah, and Mataro based blends from the Willow Creek District of Paso Robles. The winery's signature style emphasizes minimal intervention in the cellar, allowing the unique terroir of their rocky calcareous soils to shine through in their wines. With a commitment to sustainable farming practices, Saxum Vineyards eschews chemical fertilizers, herbicides, and pesticides, relying on the natural conditions of their steep hillsides and cooling ocean breezes to promote healthy vine growth. Their production is deliberately kept small, around 8000 cases per year, divided among twelve distinct cuvees. The winery's portfolio includes a range of wines from various vineyards, each with its own unique characteristics. The Terry Hoage Vineyard, for example, yields Syrah and Grenache-based blends that showcase the region's terroir. Saxum also sources fruit from other notable sites, including the Cayucos Ridge Vineyard in the San Luis Obispo Coast AVA, where they've planted 11 acres of Syrah on its own roots to produce wines with dense tannins and black pepper notes.
