Six Eighty Cellars is a pioneering winery located in Ovid, NY, within the Finger Lakes region of New York. The winery is known for its unique, earthenware-aged wines crafted from Certified Sustainable grapes using minimal intervention and unconventional techniques. Six Eighty Cellars focuses on amphora-focused aging methods, where wines are aged in ancient-style earthenware vessels to allow flavor and texture to unfold naturally. They also employ innovative techniques such as co-ferments, rare grapes, and experimental blends, while maintaining a commitment to certified sustainable practices from vineyard to vessel. The winery offers a range of tasting experiences, including a standard tasting that allows guests to choose five wines, typically lasting between 45 to 60 minutes. Reservations are strongly recommended. Brunch tastings and vineyard view picnics are also available with reservations required. The Cellar Tour Tasting is an immersive experience offered select Saturdays from May to August, where guests can taste wines straight from the vessel and explore the winery's unique aging methods. Six Eighty Cellars' tasting room offers indoor and covered outdoor seating with scenic views of Cayuga Lake. The winery is owned by Dave and Melissa Pittard, who returned to the Finger Lakes to raise their family and start a new venture, driven by creativity, curiosity, and collaboration.
