Sunset Cellars, a micro family winery founded in 1997 by Japanese-American pioneers Katsuko and Doug Sparks, is situated in Suisun Valley, California. The winery adheres to the "Zen Zin" minimalist winemaking philosophy, emphasizing respect for growers' efforts and expressing vineyard characteristics through gentle handling of grapes. Grapes are hand-sorted before crushing, fermented in half-ton containers, and aged with restrained use of new oak to enhance flavors without overpowering them. Sunset Cellars focuses on red wine varieties, including Barbera, Cabernet Sauvignon, Zinfandel, Petite Sirah, Syrah, and Charbono, with occasional white wines produced. The estate vineyard in Green Valley, Solano County, benefits from a maritime climate and volcanic soils, resulting in fresh acidity and even ripening. The winery's flagship wine is Barbera, which has won numerous awards since 1998. Sunset Cellars offers an enjoyable, relaxed tasting experience at their Suisun location, featuring their wines as well as those of partner wineries sharing similar quality standards. Due to limited production, availability is mostly restricted to the tasting room; however, shipping is possible to most US states. The winery is open Wednesday through Sunday from 12:00 pm to 5:00 pm and Friday-Saturday until 6:00 pm.
